Presenting a sophisticated modern twist on traditional Arab cuisine, Reshta’s menu pays homage to Ein Rafa’s culinary roots and offers a “farm to plate” experience based on seasonal local produce. The name “Reshta” refers to a classic lentil and pasta dish that was a childhood favorite of the restaurant’s chef, Ranem Barhum. Ranem declares: “I’m a farmer and a shepherd. The color of my skin is the color of the earth that nourishes me, and this is my cuisine.” His contemporary menu is inspired by the agricultural produce of the fields surrounding the restaurant, which are irrigated by three natural springs, using traditional methods dating back millennia.
